Cold zone-Taste advantage Compared to a conventional fryer is that in this one, the heating element is not under the frying pan as in conventional fryers, but is one to two centimeters away from the oil. The heated oil rises up the middle of the tank, cools again on the outer walls and collects under the heating element. The temperature of the oil in this zone is lower than above the heating element, so as not to reduce the taste of the food and the life of the oil. |
